So I am a HUGE pasta aficionado. But there is one pasta dish that I've never been jazzed by: spaghetti bolognese. I always felt like it held the greatest potential to be the blandest pasta dish. A couple weeks ago in Ireland, Gregory and I decided to take a shot at the ORIGINAL spaghetti bolognese recipe and I must say, my indifference to the dish has been transformed to love. This recipe includes celery, carrots, pancetta ... infinitely better than a slapdash spaghetti & meat based sauce. Anyone who serves you this dish without the additional ingredients above is doing you a disservice in authentic Italian cooking ;)
The best thing about this recipe is that it's the gift that keeps on giving. There are plenty of leftovers, leaving my tummy happy for almost a week!
